Truck Driver Recipes: Easy Jarred Hummus and Veggies

Truck driver recipe: Jarred hummusI’ve got another easy truck driver recipe for you all! Now you can snack all day long with fresh veggies and a fiber rich hummus. A very easy way to keep it within reach in the truck is by using a canning jar to store the hummus. You can make it at home, put it in the fridge and when ready for use, this jar fits right in the cup holder. Most likely you have another cup holder (or there are attachments that can create even more cup holders in any vehicle) to add a cup of carrots and celery or crackers.

Ingredients:

  • 1 can chickpeas (half-drained)
  • Half a clove of garlic
  • 1 roasted pepper
  • 3 sundried tomatoes
  • 1 tbsp Worcestershire sauce
  • Pepper

Directions:

Mix everything in a blender until smooth. That’s it 🙂

About Jenneke

Hi, I am Jenneke. I have a passion for food and became very interested in healthy nutrition a year ago. I followed the course 'Plant-Based Nutrition' at Cornell University and got my certification in April 2012. My boyfriend is a truck driver, and therefore I have first-hand knowledge of the challenges truck drivers face on the road in regards to eating healthy. It is so important that drivers stay alert and healthy in order to keep the roads safe, so I am committed to providing my boyfriend everything possible to stay healthy and fit. On this website I will share our best practices and recipes.
