I’ve got another easy truck driver recipe for you all! Now you can snack all day long with fresh veggies and a fiber rich hummus. A very easy way to keep it within reach in the truck is by using a canning jar to store the hummus. You can make it at home, put it in the fridge and when ready for use, this jar fits right in the cup holder. Most likely you have another cup holder (or there are attachments that can create even more cup holders in any vehicle) to add a cup of carrots and celery or crackers.
- 1 can chickpeas (half-drained)
- Half a clove of garlic
- 1 roasted pepper
- 3 sundried tomatoes
- 1 tbsp Worcestershire sauce
Mix everything in a blender until smooth. That’s it 🙂
