Here’s another truck driver recipe that can be frozen, taken on the truck, and reheated. I tried it myself yesterday, and even after freezing it was still delicious! This would be a great one to prepare ahead of time and take with you in small containers on the road. You should probably like garlic though — when opening the lid, the garlic will get right at ya!
Ingredients
- 300g roasted bell peppers
- 75g roasted cashew nuts
- 50g grated parmesan
- Italian parsley
- 1 tbsp Chia seeds
- Garlic
- 1 tsp olive oil
- Leafy greens like collards, kale, chard, etc
- Lemon juice
- Pasta of your choice
Directions
Blend the bell peppers, cashews, parmesan, parsley, chia seeds, a bit of garlic, and olive oil in a blender. Sautee the greens of your choice, lemon juice, and garlic for about 7 minutes – just enough to soften them up a little bit.
Serve with cooked pasta. Voila — easy and best of all, simple to make!
