Healthy Truck Driver Lunch – Tomato & Avocado Sandwiches

Open sandwich with tomato, avocado, and basilFor me, this is the best lunch I can have. You feel filled and healthy after eating it! And on top of that, it’s super simple to make in the truck. You just pile everything together and voila! All done. Here’s what you’ll need to make this healthy truck driver lunch:

Ingredients:

  • Avocado slices
  • Pesto sauce
  • Tomato and/or red bell pepper
  • Basil leaves
  • Grated black pepper
  • Some Balsamic vinegar

Spread the pesto sauce on the bread. Then all you do is pile all the veggies on top! I prefer to use Ezekial sprouted grain bread, but you could go with any 100% whole wheat bread and it would be delicious. Just make sure to keep a napkin at hand while eating. 🙂
