I’m back with a new truck driver recipe for you all. I perfected this stuffed bell pepper recipe the other day and wanted to share it with you.
This one has the perfect ingredients, is not much work to make, and is quite delicious! When I made this for the photo, the green bell pepper turned yellow after sitting in the slow cooker. Rest assured, it is a green bell pepper, though.
Ingredients:
- One green bell pepper (which turned yellow after cooking…)
- Sauerkraut
- 1/2 onion, diced
- 2 tbsp quinoa
- Pineapple cut into small cubes
- Some pepper
Directions:
Mix the sauerkraut with the onion, pineapple, quinoa, and a dash of pepper. Make sure you make enough to fill the bell pepper.
Cut the top of the bell pepper and slice a small piece off the bottom so it stands (don’t cut a hole in it!)
Fill the green bell pepper with the mix and add 2 tablespoons of water. Let it cook in the slow cooker for about 90 minutes.
