Cooking in the truck is probably one of the biggest challenges a truck driver will face in his or her journey to truck driver health. After all, there’s limited space, and let’s be honest — there’s not a whole lot of equipment available to use in a truck. But making healthy meals for truck drivers doesn’t have to be difficult!
Fortunately, there’s one piece of cooking equipment that many drivers have readily available at their disposal — a slow cooker. A slow cooker is super versatile and ridiculously simple to use, to boot. Just chuck all the ingredients in the pot, drive, and when the day is done there’s a nice, warm, home-cooked meal waiting for you.
The recipe we’re featuring today is made in the slow cooker, so not only is it super easy, but on top of that, there’s only 3 ingredients! That’s my kind of recipe.
Slow Cooker Fiesta Chicken
- 2.5 pounds boneless chicken breast
- 1 can Campbell’s condensed cheddar soup
- Salsa (16 oz jar)
(Yes, that’s really it.)
Instructions:
Add all three ingredients to your slow cooker. Cook on low for 6-8 hours, or high for 4 hours. Stir periodically. Stop for the night and enjoy a delicious, idiot-proof home cooked meal!
Serve over rice or eat alone with some veggies. Switch up the salsa spiciness for some zip!
