Quesadillas don’t have to necessarily be cheese-filled! These peanut butter banana quesadillas make great healthy snacks for truckers, and are very easy to make. Using only a few ingredients, you can have a healthy snack prepared in under 10 minutes.
How to Make Peanut Butter Banana Quesadillas
Mash one banana up in a large bowl. Add a tablespoon of peanut butter and mix together until creamy. Spread the mixture on a whole wheat tortilla, top with another tortilla, and grill in a toaster oven or George Foreman until browned. This particular recipe will make 2 servings, but you could easily cut that in half by only spooning the mixture on one half of the tortilla and flipping the other side over.
