Trucker Smoothies: Exotic Kale Smoothie – A Green Smoothie Recipe

My smoothie recipes are always half veggies, half fruit, so you’re not getting tons of fructose into your bloodstream right away. I know what you might be thinking — “eww, veggies in a smoothie?” but they really do add a lot of nutritional benefits and sometimes you can’t even taste them.

The first recipe I’m going to share in this series of healthy smoothie recipes for truckers is a green smoothie recipe.

How to Make a Green Smoothie

Whenever you can, I recommend making a smoothie with some kind of leafy green in it, like spinach or kale. Kale in particular has the highest nutritional value of all green veggies. In addition to the kale, add some strawberries, blueberries, and pineapple. If the mixture is too thick after blending, you can add a little water or juice. Just be mindful of juice, as it can be high in sugar.

Health Benefits of Kale

Green smoothies have become increasingly popular lately due to the amazing health benefits of kale and spinach. For starters, one cup of kale has zero fat and just 36 calories. It’s high in vitamins and antioxidants. It also:

  • Strengthens your immune system.
  • Is high in omega-3 and omega-6 fatty acids which gives your hair, skin, and nails a healthier appearance!
  • Is high in Vitamin A, K, and D, which all help to keep your eyes healthy and your bones strong. And studies have shown that consuming a diet high in Vitamin K can reduce your overall risk of developing cancer.

The great thing about green smoothies is that they offer tons of nutritional benefits and they don’t necessarily taste like you’re gulping down ground-up greens. The flavors of the fruit can easily overpower the taste of the greens. What a great way to get a serving of veggies 🙂 You can be creative with this, too. If you like certain fruits better than the ones I’ve suggested, by all means, use those instead!
